These come in a package of 4, cut 1" thick, as compared to the more traditional 3/4" thickness.  This is because thicker is better, according to Chris.  DO NOT OVERCOOK THESE!  It's built into our culture to overcook pork, but don't do it! A little pink on the inside is perfect. About 3 lbs.
